What happens if the funeral home has already assigned a celebrant, then I have come home and looked on the internet and found you?

I didn’t realise this myself prior to becoming a celebrant, however, you do not have to accept the celebrant they have chosen for you, you simply tell the funeral home you have changed you mind.
